OHHHH Fudge!!! Nope you know me – I don’t say fudge unless I am talking about actually fudge. I use the F word like it is confetti to be sprinkled everywhere!!! Truth is ~ time has simply gotten away from me, It went from Thanksgiving weekend to four days til Christmas faster than I could finish a bottle of red. (Okay in all honesty I have had more than one bottle of red since Thanksgiving lol) I am so sorry for not posting this sooner. I don’t know where the time has gone. I am not done with my baking, I am not at all ready for the holidays ~ hell I have’t recovered from my birthday (that is another post!!) I wanted to do these as separate posts but I just don’t want to wait. (THERE ARE RECIPES!!) So, without further ado ~ here is your Holiday After Hours ~ Thanksgiving!!

First of all, in my house turkey is not the star of the show. As a matter of fact, turkey doesn’t even make an appearance lol. The day starts, and could frankly end with cinnamon rolls. If that was all we ate all day we would be fine. However, we stop eating them about noon so we can be hungry later. There is nothing typically traditional for dinner. In my house, we have lobster. (fun fact ~ lobster was served at the first Thanksgiving in 1621. Google it lol) Broiled lobster tails, scalloped potatoes with bacon & chives and roasted green beans. However, before the end of the night, more cinnamon rolls where consumed!!


I am not the only one that wanted to share my holiday with you……

 

Ms. Kim ~Kim got out of cooking the Thanksgiving meal this year, as she and her family were traveling out of town for their holiday dinner.  But keeping with tradition, when they arrived back home, they enjoyed their usual family movie night watching Christmas Vacation! WHY is the carpet ALL WET, TODD??? I don’t KNOOOWWW, MARGO! (I think we all quote at least one line from that movie!)

 

 

Ms. Daphne ~ Ms. Daphne has shared what she promises is the “easiest yam recipe in the world”!! Ms. Daphne’s Easiest Yam Recipe Bonus ~ she swears it is calorie free! (I think she is fibbing but who doesn’t like a little lie that makes you feel good?!?!) Have fun making the best yams at your holiday table! Ms. Ryan ~ Okay here is a little confession. I have always had a secret crush on Ms. Ryan. I got a giddy when she shared such a special holiday recipe and the back story. Plus, what’s not to love about a sexy woman who has pics of red wine, coffee and chocolate on her blog?!?! Check it out and you too will have a crush!

This recipe is very special to me. My mother, bless her soul, couldn’t cook or bake to save a hair on her head. She burned water and we had to buy a new stove because of it kind of bad cook. But every year, at Thanksgiving, my mother would make this apple cake, and I looked forward to it with great anticipation. She never taught me how to make it, and when she passed, I thought it would be gone forever. However, a few years after she passed, we were cleaning the house and I came across a small index card box full of recipes that my mother apparently had hoarded over the years. I flipped through, recognizing some of her disasters as well as a few near-misses, and then one caught my eye. 
Apple Cake
This was it! This was the recipe! And now, every year, I make this for my family in honour of my mother. 
2 cups apples (granny smith or anything in the Gold family)
1 cup sugar
1.5 cups AP flour
1 tsp baking powder
1 tsp baking soda
1.5 tsp cinnamon
0.5 tsp salt
1 egg
1/3 cup vegetable oil
2 tsp vanilla
Mix apples and sugar together and let stand for 10 minutes.
In a separate bowl, flour, baking powder, baking soda, cinnamon, and salt.
Slowly incorporate egg, vegetable oil, and vanilla.
Stir in apples and sugar.
Pour into a loaf pan or an 8X8 dish
Bake at 350 degrees for 35 – 40 minutes
I am definitely going to try both of these recipes. I love when people share recipes. Again I am sorry for the delay in posting these. I will keep you posted as I get more details on everyone’s holiday plans, failures (yes even mistresses have holiday fails lol) In the meantime, I hope all of you are enjoying your holiday season.  Even though it is going way too fast for me and I am behind on EVERYTHING, I will say I am definitely feeling some holiday spirit (It could also be the wine lol)
